Beet Hummus

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup fresh lemon juice (about 1 lemon)
  • 1/4 cup tahini
  • 2 small garlic clove, minced
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp ground cumin
  • 1 cup cooked and peeled beets (either roasted or steamed)
  • Salt to taste
  • 2-3 cubes of ice

Instructions:

  1. In a food processor, combine chickpeas, lemon juice, tahini, garlic, olive oil, and cumin and steamed or roasted beets. 
  2. Blend until smooth and vibrant pink.
