Dates Stuffed with Peanut Butter

it’s super easy and tastes so much better than store-bought! Freezing these dates makes them extra delicious, and the optional chocolate chips add a fun indulgence—just like a Snickers, but way better for you! Enjoy!

Dates Stuffed with Peanut Butter

My version of a snicker bar.. Enjoy!  

Ingredients:

  • 12 Medjool dates (pitted)
  • 1/4 cup natural peanut butter (smooth or crunchy, depending on preference)
    (I like to make my own peanut butter – check out the recipe in the snack section!)
  • Pinch of sea salt (optional, for flavours contrast)
  • Chopped nuts (optional, for topping)
  • Mini dark chocolate chips (optional)

Instructions:

  1. Prepare the Dates:
    • Slice the dates lengthwise on one side to create an opening and remove the pit. You can also slice them in half for easier stuffing, depending on your preference.
  2. Stuff the Dates:
    • Using a small spoon or piping bag, fill each date with about a teaspoon of peanut butter. Don’t overstuff; you want the peanut butter to stay inside.
  3. Optional Add-ins:
    • For a sweet and salty twist, sprinkle a pinch of sea salt over the peanut butter.
    • If you like a bit of crunch, top with chopped nuts like almonds, peanuts, or even cashews.
    • Optional: For an extra indulgent touch, add a few mini dark chocolate chips inside the date with the peanut butter. This adds a rich, chocolaty flavor that reminds me of a healthier version of a Snickers bar!
  4. Freeze for Extra Enjoyment:
    • My personal favorite way to enjoy these is to keep them in the freezer for a few hours. The cold, chewy texture combined with the creamy peanut butter and optional dark chocolate chips is such a treat—like a frozen Snickers, but with wholesome ingredients.
  5. Serve and Enjoy:
    • These dates are the perfect snack, dessert, or energy bite. Keep them in the fridge or freezer for a cold, satisfying treat. Store in an airtight container for up to a week (although they won’t last that long!).
