Gluten-Free Marry Me Chicken Pasta
Servings: 4
Ingredients:
- 8 oz gluten-free pasta (such as brown rice or chickpea pasta)
- 2 tablespoons olive oil
- 2 boneless, skinless chicken breasts, diced
- Salt and pepper, to taste
- 2 cups fresh spinach
- 1/2 cup sundried tomatoes, chopped (in oil for added flavor)
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon tomato paste

- For the Cashew Cream:
- 1 cup raw cashews, soaked in water for at least 4 hours (or overnight)
- 1/2 cup water (more for desired consistency)
- 1 tablespoon lemon juice
- Salt, to taste
- Nutritional yeast (optional, for a cheesy flavor)
- Fresh basil leaves, chopped (for garnish)

Instructions:
- Prepare the Cashew Cream:
- Drain and rinse the soaked cashews. In a blender, combine the cashews, 1/2 cup of water, lemon juice, and a pinch of salt. Blend until smooth and creamy, adding more water if necessary to reach your desired consistency. Set aside.
- Cook the Pasta:
- In a large pot, bring salted water to a boil. Add the gluten-free pasta and cook according to package instructions until al dente. Drain and set aside.
- Sauté the Chicken:
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Prepare the Sauce:
- In the same skillet, add a bit more olive oil if needed. Add the minced garlic and red pepper flakes (if using) and sauté for about 30 seconds until fragrant.
- Stir in the sundried tomatoes, tomato paste, and spinach, cooking until the spinach wilts, about 2-3 minutes.
- Combine:
- Return the cooked chicken to the skillet. Add the soaked cashew cream and stir to combine. Allow the mixture to heat through, simmering for a few minutes.
- Add the cooked pasta to the skillet and toss everything together. If using, sprinkle in nutritional yeast to taste for a cheesy flavor. Adjust seasoning with salt and pepper.
- Serve:
- Divide the pasta among serving plates and garnish with fresh basil. Enjoy your delicious Gluten-Free Marry Me Chicken!
