Gluten-Free Marry Me Chicken Pasta

Servings: 4

Ingredients:

  • 8 oz gluten-free pasta (such as brown rice or chickpea pasta)
  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, diced
  • Salt and pepper, to taste
  • 2 cups fresh spinach
  • 1/2 cup sundried tomatoes, chopped (in oil for added flavor)
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon tomato paste
  • For the Cashew Cream:
    • 1 cup raw cashews, soaked in water for at least 4 hours (or overnight)
    • 1/2 cup water (more for desired consistency)
    • 1 tablespoon lemon juice
    • Salt, to taste
  • Nutritional yeast (optional, for a cheesy flavor)
  • Fresh basil leaves, chopped (for garnish)

Instructions:

  1. Prepare the Cashew Cream:
    • Drain and rinse the soaked cashews. In a blender, combine the cashews, 1/2 cup of water, lemon juice, and a pinch of salt. Blend until smooth and creamy, adding more water if necessary to reach your desired consistency. Set aside.
  2. Cook the Pasta:
    • In a large pot, bring salted water to a boil. Add the gluten-free pasta and cook according to package instructions until al dente. Drain and set aside.
  3. Sauté the Chicken:
    • In a large skillet, heat the olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. Prepare the Sauce:
    • In the same skillet, add a bit more olive oil if needed. Add the minced garlic and red pepper flakes (if using) and sauté for about 30 seconds until fragrant.
    • Stir in the sundried tomatoes, tomato paste, and spinach, cooking until the spinach wilts, about 2-3 minutes.
  5. Combine:
    • Return the cooked chicken to the skillet. Add the soaked cashew cream and stir to combine. Allow the mixture to heat through, simmering for a few minutes.
    • Add the cooked pasta to the skillet and toss everything together. If using, sprinkle in nutritional yeast to taste for a cheesy flavor. Adjust seasoning with salt and pepper.
  6. Serve:
