Mango Sago with Chia Seeds

Mango Sago with Chia Seeds 

Serving: 4

Ingredients:

  • 1/2 cup sago pearls
  • 1/2 cup chia seeds
  • 2 ripe mangoes (peeled and diced)
  • 1 can (400 ml) coconut milk
  • 1/2 cup water (for chia seeds)
  • 1/4 teaspoon Himalayan sea salt
  • Optional: 1 teaspoon maple syrup (for sweetness)

Instructions:

  1. Prepare the Sago and Chia Seeds:
    • Rinse the sago pearls under cold water until the water runs clear.
    • In a pot, bring 4 cups of water to a boil. Add the sago and cook for about 10-15 minutes, stirring occasionally, until they turn translucent.
    • Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.
  2. Soak Chia Seeds:
    • In a bowl, combine chia seeds with 1/2 cup of water. Let them soak for about 15 minutes until they form a gel-like consistency.
  3. Make the Coconut Mixture:t
    • In a saucepan, heat the coconut milk gently with 1/4 teaspoon of Himalayan sea salt. If desired, stir in 1 teaspoon of maple syrup to sweeten. Mix until well combined.
  4. Combine Ingredients:
    • In a large bowl, mix the cooked sago, soaked chia seeds, and diced mangoes. Pour the coconut milk mixture over the ingredients and gently stir to combine.
  5. Chill and Serve:
    • Refrigerate for at least 30 minutes to allow the flavours to meld.
    • Serve chilled.
