Roast Chicken with Oranges and Sesame

Enjoy your roast chicken with oranges and sesame! I love to pair this dish with roasted beans and sweet potatoes. It’s delicious and a super satisfying dish and remember to take a few deep breathes before eating – digestion is a north to south process, it stops working if you are stressed while eating.

Ingredients:

  • 1 whole chicken (about 4-5 pounds)
  • 2 tablespoons olive oil
  • 2 oranges, zested and juiced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons fish sauce
  • 1 tablespoon sesame seeds (toasted)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 1 additional orange, cut into wedges (for roasting)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare Chicken:
    • Rinse the chicken and pat it dry with paper towels. Place the chicken in a roasting pan or a large oven-safe dish.
  3. Make Marinade:
    • In a bowl, combine olive oil, orange zest, orange juice, minced garlic, grated ginger, fish sauce, dried thyme, and dried rosemary. Whisk together until well mixed.
  4. Marinate Chicken:
    • Rub the marinade all over the chicken, making sure to get some under the skin if possible. Season generously with salt and pepper. If time allows, let the chicken marinate in the refrigerator for at least 30 minutes to a few hours for enhanced flavour.
  5. Prepare Vegetables:
    • Place the quartered onion and additional orange wedges in the bottom of the roasting pan. This will create a flavourful bed for the chicken and add extra flavour during roasting.
  6. Roast Chicken:
    • Place the marinated chicken on top of the onion and orange wedges in the roasting pan. Pour any remaining marinade over the chicken.
    • Roast in the preheated oven for about an hour, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy and golden brown. Baste the chicken occasionally with the pan juices for added flavor.
  7. Add Sesame Seeds:
    • About 10 minutes before the chicken is done, sprinkle toasted sesame seeds over the top for added flavour and texture.
  8. Rest and Serve:
    • Once cooked, remove the chicken from the oven and let it rest for about 10-15 minutes before carving. This allows the juices to redistribute throughout the meat.
  9. Optional:
    • For a more intense orange flavour, you can reduce the remaining pan juices on the stovetop until slightly thickened and serve it as a sauce with the chicken.
