Roasted Chicken with Dill and Orange

Roasted Chicken with Dill and Orange

Servings: 6-8

Ingredients:

  • 1 whole chicken, cut into pieces (legs, thighs, wings, and breasts)
  • 4 tablespoons olive oil
  • 1/4 cup fresh dill, chopped (plus extra for garnish)
  • 6 cloves garlic, minced
  • 1 teaspoon paprika
  • Juice of 1 small orange
  • Zest of 1 small orange
  • 1 large onion, quartered
  • 1 lemon, sliced
  • 12 garlic cloves, whole
  • Salt and pepper, to taste
  • Optional sides: Rocket salad and roasted sweet potatoes

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Marinade:
    • In a bowl, whisk together the olive oil, chopped dill, minced garlic, paprika, orange juice, orange zest, salt, and pepper.
  3. Marinate the Chicken:
    • Place the cut chicken pieces in a large bowl. Pour the marinade over the chicken, ensuring all pieces are well coated. Let it marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator.
  4. Prepare the Onions and Aromatics:
    • In a roasting pan, place the quartered onion in the center. Arrange the lemon slices and whole garlic cloves around the onions.
  5. Roast the Chicken:
    • Place the marinated chicken pieces on top of the onions, lemon slices, and garlic cloves. If desired, you can also add sweet potato wedges around the chicken in the roasting pan. Roast in the preheated oven for 45-55 minutes, or until the internal temperature reaches 165°F (74°C) and the chicken is golden brown. Baste the chicken with the pan juices halfway through cooking for extra moisture.
  6. Serve:
    • Remove the chicken from the oven and let it rest for about 10 minutes. Garnish with additional fresh dill before serving.
    • I love this chicken with a bowl of rocket salad and sweet potatoes that I roast along with the chicken!
