Roasted Red Pepper Hummus

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup fresh lemon juice (about 1 lemon)
  • 1/4 cup tahini
  • 2 small garlic clove, minced
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp ground cumin
  • Salt to taste
  • 2-3 cubes of ice
  • 1/2 cup roasted red peppers 
  • 1/2 tsp smoked paprika

Instructions:

  1. In a food processor, combine chickpeas, lemon juice, tahini, garlic, olive oil, and cumin, roasted peppers. 
  2. Add a few cubes of ice to make it extra smooth
  3. Blend until smooth.
  4. Drizzle olive oil and sprinkle with paprika before serving.
