Salted Caramel Bliss Balls

Ingredients

  • 14 pieces of medjool dates
  • 1 cup almond meal
  • 1/2 cup unsweetened fresh shredded coconut  (1/4 cup for blending and the rest for coating)
  • 1/2 teaspoon sea salt 

Instructions

  1. Prepare the Dates:
    • If your dates are not soft, soak them in warm water for about 20 minutes to soften. Drain well before using.
  2. Blend the Ingredients:
    • In a food processor, combine the pitted dates, almond meal, sea salt and shredded coconut 
    • Process until the mixture is finely chopped and begins to come together. It should be sticky and hold together when pressed. 
  3. Form the Bliss Balls:
    • Scoop out tablespoon-sized portions of the mixture and roll them into balls using your hands. If the mixture is too sticky, lightly wet your hands with water to make rolling easier.
  4. Coat and Set:
    • Roll the bliss balls in a bit of shredded coconut for extra texture.
    • Place the rolled balls on a plate
  5. Chill:
    • Refrigerate the bliss balls for at least 30 minutes to firm up. They can be stored in the fridge for up to 2 weeks or frozen for up to 3 months.

Tips

  • Customization: Feel free to experiment with different nuts, seeds, or add-ins like chocolate chips or dried fruit.
  • Texture: If you prefer a smoother texture, you can blend the mixture for a longer time. For a bit of crunch, pulse the nuts a little less.
